VEGETABLE CUTLETS

INGREDIENTS

  1. Onion – 1 fine chopped
  2. Carrot – 1 fine chopped
  3. Beans – 5-6 fine chopped
  4. Green peas – 1/2 cup (Boiled)
  5. Green chillies – 2 fine chopped
  6. Ginger garlic paste – 1 Tbsp
  7. Mashed potatoes – 2
  8. Fennel powder – 1 Tbsp
  9. Bread crumbs
  10. Oil
  11. Salt to taste.
  •  Add a teaspoon of oil to a pan and turn the flame ON.

  • When oil is hot, add fennel powder.

  • Add green chillies ,onions and a pinch of salt. Saute it till onion becomes transparent.

  •  Add ginger garlic paste and stir it well.

  •  Add all the finely chopped vegetables . ( I didn’t add any water for the vegetables to cook. I chopped it finely so no water is needed. If you feel that your vegetables need to be cooked then steam cook it separately and add. Excess moisture always tends to break the cutlets)

  • Add chilli powder ,salt and cook it on a low flame.

  • Once the vegetables gets cooked add mashed potatoes and mix it well.

  • Turn the flame OFF and let it cool for a while. Add 2 Tbsp breadcrumbs it absorbs excess moisture and binds well.

  • Now make the cutlets into your desired shape and roll it on  bread crumbs.

  • Add 2 Tbsp oil to a flat pan and place the cutlets
  • Add some oil when you turn it to the other side.

  • Cook it on both the sides and serve hot.
  • Serve with finely chopped onions,carrots and tomato ketchup.
